Mango Coconut Chia Seed Pudding

Today we are making a Mango Coconut Chia Pudding. This recipe combines creamy coconut chia pudding with a fresh mango mixture for a naturally sweet, delicious, and satisfying breakfast or snack. You can make it ahead and store it in the fridge for the whole week!

Fiber is a type of carbohydrate that your body does not fully digest. It plays an important role in digestive health and can help you feel fuller and more satisfied after eating.
There are two main types of dietary fiber: soluble and insoluble fiber. Soluble fiber dissolves in water and can help slow digestion, while insoluble fiber adds bulk to stool and helps support regular bowel movements. (Chia seeds have both types of fiber!)
Most people do not get enough fiber in their diets, which is why I love finding simple ways to add more fiber to meals and snacks. Chia seeds are an especially easy way to boost your fiber intake—just one of the reasons I love using them in chia pudding!

Ingredients
Coconut Chia Pudding:
4 tablespoons chia seeds
1 cup full-fat canned coconut milk
1 tablespoon agave
Mango Mixture:
1 large mango
1 teaspoon lemon juice
1 tablespoon water
How to Make Mango Coconut Chia Pudding
Step 1: Coconut Chia Pudding
In a bowl, combine the chia seeds, coconut milk, and agave. Stir thoroughly until everything is well combined.
Cover and refrigerate for at least 2 hours, or overnight, until the mixture has thickened into a pudding-like consistency.
Step 2: Mango Mixture
Peel and chop your mango. Add the mango, agave, lemon juice, and water to a blender or food processor.
Blend until smooth.
Step 3: Assemble
Once your chia pudding has thickened, divide it evenly between four containers or jars.
Top each serving with the mango mixture.
You can enjoy your chia pudding immediately or cover and store it in the refrigerator for an easy breakfast or snack throughout the week!
