Peach Cobbler Chia Overnight Oats (Easy Single-Serve Recipe)

What is better than peach cobbler in the summertime? It is just so sweet and delicious! Today, I am bringing the nostalgic peach cobbler you would have at a cookout to the comfort of your morning routine- packed with fiber!

Prep this recipe in bulk, and you can have a delicious breakfast ready to grab with no thinking required.

What is Fiber?

Fiber is a type of carbohydrate that your body does not fully digest. It plays an important role in digestive health and can help you feel fuller and more satisfied after eating.

There are two main types of dietary fiber: soluble and insoluble fiber. Soluble fiber dissolves in water and can help slow digestion, while insoluble fiber adds bulk to stool and helps support regular bowel movements. (Chia seeds have both types of fiber!)

Most people do not get enough fiber in their diets, which is why I love finding simple ways to add more fiber to meals and snacks. Chia seeds are an especially easy way to boost your fiber intake—just one of the reasons I love using them in chia pudding!

What are Chia Seeds?

Chia seeds are tiny black or white seeds that come from the Salvia hispanica plant. While they are small, chia seeds are a great source of fiber and also provide plant-based protein and healthy fats.

One of my favorite things about chia seeds is how easy they are to incorporate into everyday meals. You can add them to smoothies, yogurt bowls, oatmeal, or make them into chia pudding!

When chia seeds are mixed with liquid, they absorb the liquid and develop a soft, gel-like texture. This is what gives chia pudding its thick, creamy consistency.

Ingredients

  • ½ cup quick oats

  • 1 tablespoon chia seeds

  • ¾ cup choice of milk (almond, oat, whole- I used almond!)

  • ½ tablespoon agave

  • ½ peach peeled & chopped

  • ½ tsp cinnamon

How to Make Peach Cobbler Chia Overnight Oats

  • In a bowl, combine the oats, chia seeds, choice of milk, peaches, cinnamon, and agave. Stir thoroughly until everything is well combined.

  • Cover and refrigerate for at least 2 hours, or overnight, until the mixture has thickened into a pudding-like consistency.

  • Top with your favorite granola, fresh peaches, or some Greek yogurt!

    • Greek Yogurt is a great way to get some additional protein from this breakfast! Add ½ cup plain Greek Yogurt to reach 20g with this on the go breakfast!
